As the saying goes, "The world's noodles look at China, and Chinese noodles look at Shanxi". Shanxi has more than 1,000 kinds of noodles, the most well-known of which is the traditional noodle-making art "Shaving Noodles with a Flying Knife".

On the occasion of the 2024 Shanxi Tourism Development Conference, Diana Pukhova, a girl from Russia, learns to make noodles using kung fu from Zhao Xiping, the inheritor of Taiyuan's intangible cultural heritage.

Diana feels that Shanxi Sliced Noodles are not only a cuisine but also a sort of culture. The process of shaving the noodles is just like a martial arts performance. She hopes that a growing number of international foodies will learn about the time-honored traditional Chinese food culture through noodles.
