Located in Montalcino, Tuscany, Castiglion del Bosco is a picturesque 800-year-old estate with vineyards producing brunello and Rosso di Montalcino wines. This month, Beijing diners can enjoy the seasonal flavors of white truffles paired with fine Italian wines.
Through Nov 18, diners at Bistrot B can tuck in to the culinary creations of Enrico Figliuolo, executive chef at Rosewood Castiglion del Bosco. A Celebration of the Italian White Truffle is an exquisite four-course wine-pairing menu described by chef Figliuolo as a “culinary journey from Beijing to Italy”. Chef Enrico oversees the Osteria La Canonica and Ristorante Campo del Drago restaurants, plus La Canonica Cooking School, and his elegant dishes embody classic Tuscan and Italian culinary traditions.
Massimo Ferragamo, founder of Rosewood Castiglion del Bosco, kicked off the culinary event at a gala dinner where he unveiled the new Castiglion del Bosco Brunello di Montalcino Riserva 2010 Zodiac Rooster. The limited edition 2017 series, released in just 688 magnums, features a beautifully rendered rooster printed on the label by artist Shao Fan. Ten percent of the proceeds from each bottle, available by pre-order, will be donated to a charity in China.
Exclusive wines from the same vineyards served at Rosewood Beijing during November include Brunello di Montalcino, which is a beautifully balanced sangiovese with a generous and emphatic fragrance. The ruby-red Campo del Drago is an extremely complex Brunello di Montacino Cru, and Millecento is a complex yet elegant reserve noted for its finesse.
From Nov 19 to 27, Bistrot B's resident chef Jarrod Verbiak continues the homage to white truffles with his own four-course menu. Simple yet expertly crafted dishes such as Carnaroli Acquerello risotto and poached golden chicken with tender root vegetables and foie gras velouté "Albufera" showcase the natural flavor of the luxurious white fungus.
