Huang tells us the veggies rolls are called "runbing" in Taiwan, where they were imported from the Fujian province on the east coast of the Chinese mainland.

"It is a traditional food in Taiwan. People only eat it on Tomb-sweeping Day and at the end of the year," Huang said. "But it is no longer popular in Taiwan. Now in China, it is has been transformed by me. It is my own taste."

"The cake is special. It is very thin," he continues, urging us to have a taste. "It is good for people to take a break from staple foods. Eating too much of them is also unhealthy."

Analyzing the eating habits of Chinese people, Huang said they pay a lot of attention to food, avoid fatty meat and always wash their hands before dining. But he thinks there is too much oil and salt in the dishes, which drives people's blood pressure and cholesterol levels up.

"I boil my vegetables, instead of stir-frying them for the veggie rolls," Huang said. "And I want to raise young people's awareness of their diet."

Huang plans to open branch restaurants in the places frequented by young people in the future.

"It is too late to manage your diet when you're forty or fifty years old, the right age is twenty," he said.

A special kind of "sushi" is another specialty that perplexes many new customers. Huang invented the rolls, which are stuffed with vegetables like carrots, mushrooms, bananas, cucumbers, tomatoes, pickles, lotus roots instead of sashimi. Customers love them for their beautiful appearance.

"I suggest that people avoid staple foods, but my 'sushi' gives those who like to eat a little rice," Huang said.

The egg potato salad ay Fitness Veggie Rolls is also worth mentioning. The yolks are removed because too much of it increases people's cholesterol levels.

Salads and all sorts of boiled vegetables are also served up at the restaurant. Beverages on offer include coca cola, beer and red bean water-ice. Mustard and salad dressings are presented in special dispensers so customers can take as much as they like.

Average cost per head is 29.9 yuan. A special 60% discount is on offer until August 31, so the meals will only cost 16 yuan a person.
