Take a Tuscan approach to cookingBy Theresa Miao (Shanghai Star)
Updated: 2006-09-15 09:53 The Italian risotto, which was made of rice and red wine from Tuscany, was popular during the tasting. Similar dishes are on the menus and different restaurants will prepare their version of risotto. Amici restaurant at the Regent Shanghai will serve black ink risotto with grilled baby cuttlefish while Mimosa will offer a choice of seafood risotto with acidic butter. My favourite at the tasting was a parfait that tasted like a combination of milk and fruits with a crispy pancake that made it even more tasty. The dessert will be available in Amici. "Italian cuisine varies from place to place in the country. In Tuscany, the food is combined with culture, arts, and fashion and you will find it varied," said the Italian chef Denis Vecchiato from Amici. "So, every sense will be a good sense." Some other dishes on the menus will be smoked carpaccio and pan-fried veal tenderloin, black truffle and porcini mushrooms.Seafood will also be featured duringthe promotion as Tuscany is rich in a vast variety of seafood. The Tuscany food promotion in the five restaurants will last from September 22 to 30. Amici
