Diamonds of cuisine worldBy Xu Xiaomin (Shanghai Star)Updated: 2006-11-23 15:30 My favourite was the braised lobster and hairy crab meat in bouillon with white truffle, which proved delicious.The delicate texture and fresh taste of the seafood and the flavour of the truffle was a perfect combination. The first three courses left me almost no space for the last course:roasted veal tenderloin,Parmigiana of white truffle D'Alba, celery and Grana Padano cheese on Barolo braised red cabbage. The food was complemented by Barolo red DINING Diamonds of cuisine world wine. The robust and powerful wine is made from Nebbiolo, a black grape. The wine is known as the "king of wine" and is considered as one of the world's best. The Barolo is a robust red - very dry and full bodied, high in tannin, acidity and alcohol. Like many Italian wines, it is best with food. After experiencing the four courses,we had a last surprise - ice cream truffle of chocolate and hazelnut with a centre of white chocolate and Tartufo Bianco D'Alba praline. During the Piedmont promotion, which ends on November 26, eight restaurants will provide special truffle-based menus.
