Located in a heritage building on the Bund, Shui Yuan restaurant features healthy eating, drawing on a range of Chinese regional cuisines as opposed to imperial dishes. Steering away from the unhealthy tendencies of Chinese cooking that is greasy and loses nutrition in the process of cooking, Shui Yuan¡¯s chefs use low-cholesterol oil and organic vegetables, eschewing MSG and the heavy use of salt and sauces that Chinese cooking often resorts to.

Its executive chef Richard Ong and Ong's deputy Wu Xinggui, a veteran chef from Sichuan Province, have created a broad variety of dishes that are elegant and simple, bringing out the inherent flavor of the ingredients. Both lunch and dinner set menus are themed around natural elements and symbols, so you can choose from such menus as Moon, Sun, Wind or Earth. Lunch sets are light but flavorful while dinner sets offer a spectrum of various specialties, ranging from heathly organic vegetables to sumptuous sea delicacies.

The decor of Shui Yuan is contemporary yet unmistakably Chinese, making use of natural materials such as wood, stone and bronze, but with a touch of modernity merging with traditional elements. Tables beside windows enjoy a fascinating view of the Bund, the Huangpu River and Lujiazui in Pudong. Bedecking the wall of the restaurant are paintings of Chou Shude, a well-known artist in China.
