For typical Shandong cuisine, try Hai Shen Wang (Wang's Sea Cucumber). The restaurant is run by the daughter and son-in-law of chef Wang Yijun, a big name in Chinese cuisine. He specializes in dishes from Shandong province, or Lu cuisine, which is the basis of most of the dishes in North China.
