The Tujia people in west Hunan practice their tradition of making cured pork. A piece of well-cured pork can maintain fresh for half a year. It can be used for making sour and spicy soup.
Smelly bean curd is made from bean curd, bittern, winter bamboo shoots and starter wine. When frying the smelly bean curd, sesame oil and soy sauce, other seasonings are added. Crispy on the outside and tender on the inside, the smelly bean curds are very delicious.
Created by the Dong'an people from Hunan Province as early as the Tang Dynasty (AD 618-907), this famous traditional dish has a history of over 1,200 years. Cooked with fat and chicken, the dish is hot, crisp, sweet, tender and spicy.
