Duck breast and chicken feet salad
Ingredients (serves 4):
1 smoked duck's breast
1 packet pickled chicken feet
1 whole cucumber Cherry tomatoes Sesame oil Method:
1. Scrub cucumbers and cut off both ends. Slice into rounds and arrange on a platter.
2. Slice duck's breast thinly at a diagonal and arrange slices next to the cucumbers.
3. Open the packet of chicken feet and trim off any claws still attached. Trim any large pieces into manageable serving sizes. Arrange next to cucumbers and duck's breast. Garnish with a few of the pickled green peppers that come with the chicken feet.
4. Shake a few dashes of sesame oil over the chicken feet.
5. Wash and rinse cherry tomatoes and complete the salad arrangement with a row of cherry tomato halves.
Food notes:
This is more assembly than cooking but it is a good recipe to have on hand, especially when you have to deal with unexpected guests. You can substitute the duck and chicken feet with your choice of smoked sausages or cold cuts or use your favorite salad leaves instead.
