Duck soup

The soup of the stewed duck is fresh, light and sweet. The recipe is very versatile and can be made with a combination of your favorite vegetables.
To make, skin the duck (as the skin contains a lot of unwanted fat tissue), cut in large chunks and boil with ginger and leek ends for 1 hour in a pressure cooker. Prepare your choice of fresh vegetables that are in season. Duck meat goes great with carrots, Chinese white raddish, pumpkins, mushrooms and potatoes. Add the meat and soup in a thick-bottom pot, toss in the vegetables chunks and cook until they soften. Season with salt just before serving.
