Beware the confection which can bite back. Technically they're not entirely edible as they're typically constructed out of a carvable polyurethane-sculpting foam, which is shaped with handheld Japanese woodcarving knives. The cakes are then frosted and decorated with a variety of thickened acrylic gels, using traditional cake decorating tools and pastry bags.
