Shang Palace now serving up Peking duck

The Shang Palace Chinese restaurant at the Shangri-La Hotel, Beijing, now offers diners a reinvented dining experience with its new menu that includes Peking duck and other duck delicacies.

Chef Wang Zheng, 32, who has more than 16 years' experience in the kitchen at Quanjude, China's iconic restaurant chain for Peking duck, has brought authentic traditional Peking duck to the restaurant last month.

Wang's version of Peking duck is processed under traditional cooking method strictly, which is characterized with pouring water into the duck with a copper kettle, so that the duck will cook evenly inside and out.

The duck is also roasted with fire made by date wood, to give it a date aroma.

Other duck dishes, such as marinated crispy duck and organic vegetable salad with homemade dressing, sauteed diced duck with rice wine, and deep-fried duck hearts and spicy sauce, are all well-presented and have brought out the best flavors of ingredients that are sourced locally to ensure freshness and top quality.
