Top restaurants flaunt their truffles

After enjoying a la carte white-truffle dishes from chef Barazzutti-including handmade tortellini with the rare cave-aged Castelmagno cheese, head for the bar. There, Italian-born mixologist Simone Rossi gives the white truffle a contemporary twist in a cocktail. It's a mix of pear-and truffle-infused vanilla vodka topped with a cotton-candy cloud laced with Alba white-truffle shavings, priced at HK$188 (about $25).
