Zijin Mansion at Waldorf Astoria Beijing has recently welcomed James Wang as the restaurant's new executive chef. In the past 15 years, he has worked in several prestigious Cantonese restaurants. Last year, the hotel restaurant he was in charge of in Seoul was awarded a Michelin star. Now in Beijing, he is looking to blend Hong Kong delicacies into the current exquisite Cantonese cuisine with the addition of Beijing flavors. New dishes on the menu include Cantonese suckling pig and crispy rice in lobster bisque.
