Top Japanese barista shares his secrets

The 2016 Brewers Cup Champion Tetsu Kasuya recently shared his experiences of coffee-brewing with fans at Greybox Coffee at the Beijing Kerry Center.

The Japanese barista won the championship with his "four-six method", developed after numerous experiments.

Explaining his method, he says he divides the water he's using to brew the coffee into 40 and 60 percent and lets the water drip through completely before adding anymore.

At the outlet, he showed fans how to make coffee using the method and says it is easy for people to do it at home.

In 2016, the Beijing-based luxury flower store Roseonly opened Greybox Coffee, a cafe chain outlet that offers specialty coffee in five cities including Shanghai and Chengdu.

The cafe uses coffee beans from plantations all over the world and fresh imported milk. It plans to open another outlet in downtown Beijing soon.
