Cheese and onion pie

Cheese and onion pieThere's nothing more comforting after a hard day, than the smell of a fresh pie cooking in the oven. And as cheese is the ultimate in comfort food - why not combime the two - in a Cheese and onion pie.

Take:

450g (1lb) Onions
225g (8oz) Shortcrust Pastry
225g (8oz) Cheddar Cheese
1 tsp Mustard
Black Pepper
Egg
Method:

Preheat the oven to Gas mark 6 (200&dec;c or 400°f)
Slice the onions and place them into boiling water for about 10 minutes
Meanwhile, roll the pastry out and line a large pie dish with it (Approx. 2pint)
Drain the onionsand allow to cool, then add the the grated cheese and mustard, and place the whole lot into the pie dish
Roll out the remainder of the pastry to make the lid and brush the edges of the pie base with egg, before sealing the lid on the top
Brush the Lid with Egg, and make a steam hole in the centre.
Bake in the oven for 20-25minutes
Serve:
Sprinkled with crispy bacon and onion bits. serves 6
