The perfect cooling treat for a hot summer's lunchtime.
Take:
100ml red wine vinegar
1tbsp white sugar
1 tsp salt
2 large cucumbers, peeled, seeded, and cut into 1/2-inch slices
3 large tomatoes, seeded and chopped
80g chopped red onion
100g chopped fresh mint
2 tbsp olive oil
salt and pepper to taste
Method:
1. Vinegar, Sugar and salt in a large bowl, and whisk together. Add the Cucumber and coat evenly, and leave to marinade for 1 hour
2. Combine the Tomatoes, onion, mint, olive oil and cucumber mix, then season with salt and pepper.
