The other day I had the urge to make a huge quantity of cupcakes but I wanted a recipe that would work 100% & would come out like the cupcakes you get from professional bakeries! So i looked & looked then came across this recipe & when I tried it, it turned out to be Grrreat!
The vanilla cream topping is also fantastic! Just the way I wanted!
But I have to warn you, for these mouthwatering cupcakes, there's a lot of butter involved!
Ingredients: (for about 30 cupcakes)
For cupcakes:
2 3/4 cups flour
2 cups sugar
3/4 tspn salt
2 tbspn baking powder
1 cup soft unsalted butter -equals 2 sticks-
4 eggs
1 tspn vanilla
1 cup milk
For Vanilla Cream Topping:
1 cup soft unsalted butter -equals 2 sticks-
6 cups confectioners sugar
1/2 cup milk
1 tspn vanilla Preheat oven to 325°. Line cupcake pans with paper liners.
In the bowl of an electric mixer combine flour, sugar, baking powder, and salt; mix on low speed until combined. Add butter, mixing until just coated with flour.
In another bowl whisk together eggs, milk, and vanilla. With mixer on medium speed, add wet ingredients in 3 parts, beat until ingredients are incorporated but do not over beat.
Divide batter evenly among liners, filling about two-thirds full. Bake for 17 to 20 minutes.
When done, cool completely. Repeat with remainder of cupcake batter.
As for the frosting (topping), in bowl of an electric mixer combine butter & sugar, beat until soft, then add milk & vanilla & beat until completely soft.
Use a small spatula to frost tops of each cupcake. You can decorate the cupcakes with sprinkles as well to give extra colors.
Enjoy them with each bite! They are fantastic!
