Chef Rob Cunningham (left, below) of Feast has teamed up with chef Aitor Olabegoya of Migas for the next Carnivore's Club dinner on June 25, when they will prepare a four-course, Spanish-style set menu using pork. The Carnivore's Club at Feast was created to increase awareness of secondary cuts and offals; growing up on a farm in Victoria, Australia, the Cunningham family used every part of the animal for cooking. The upcoming menu features a starter of chorizo "lollipops", a suckling pig and a pastel ruso dessert from Spain's Basque country, topped with mandarin sorbet, whiskey and candied zest reduction, cream, fresh orange and pink grapefruit. 238 yuan ($38) plus service charge.
