The store’s owner is surnamed Lyu. His wife makes two varieties of pancakes; savory, cooked with spiced salt and onion oil, and sweet, laced with white sugar. She has been making pancakes for 26 years, which explained her deft and quick movements. The spouse said that the business improved after the pancake techniques were listed as an intangible cultural heritage in Wuxi in 2014.
