Comfort puddings

Recipe
| Coconut PuddingIngredients (serves 4):
100 ml coconut milk
100 ml milk
50 g corn starch
200 ml water
50 g sugar
100 g sweetened bean paste
Method:
1. Place coconut milk, milk and sugar into a deep pan and stir well. Heat over medium fire. Combine corn starch and water and add to pan. Stir to blend and make sure there are no clumps.
2. Stir and simmer over gentle heat until mixture starts to thicken and bubble. Remove from fire.
3. Stir in red bean paste and break up any large lumps. Pour into molds and chill well. Unmold and serve well chilled, topped with a spoonful of red bean paste.
