Recipe | Turmeric fried fish
Ingredients (serve 4 to 6):
12 small fishes, heads removed
1 teaspoon salt
1 teaspoon chili flakes
1 teaspoon turmeric powder
1 tablespoon corn starch
3 tablespoons plain flour
Method:
1. Coat the fish with the turmeric and chili powders, flour, corn flour and salt. The best way is to place everything in a zip-lock bag and shake well to coat.
2. Heat up 2 cm oil in a deep sauce pan and fry the fish, about 4 minutes on each side, over medium heat until they are golden and crispy. Remove and drain on kitchen paper.
