They are crispy and are quite different from meat balls in China’s east coastal areas. Meixian, a county in Guangdong province, is known for its Bingcun Meat Balls, which are described as "extremely crispy", and Yongding, a county of Longyan city, Fujian province, is known for beef tendon meatballs, which are hailed for their "fresh taste". Hakka Meat Balls are a local favorite at family meals and are also often seen during formal banquet-style occasions – because of the pronunciation of the character yuan "圆" in the Chinese name of this dish, which means "perfection" and "reunion". "圆" also has the same pronunciation as "缘", which means "luck". Thus, when both fish balls and beef balls are served at a meal, there is an auspicious meaning in Chinese traditional culture: "Good things should be in pairs".
