Laohua is a traditional Fuzhou street food. Literally, “Lao” means getting the noodles out of the boiling water. “Hua” is a type of rice noodle native to Putian city, Fujian province.
Diners can add ingredients such as seafoods, vegetables, mushrooms, meat or organ meats to their noodles.
The soup is where the secret of the delicacy lies: It is boiled with pork bones for at least three hours with a dash of garlic oil to bring out flavor.
