Peanut Soup is a very popular snack in Fujian province. It originated in Quanzhou and is now well-known across the province and abroad. A bowl of peanut soup is a tradition for birthdays, weddings and festivals in Quzhou. And, even though the ingredients are very simple, making the soup itself can be an exquisite process:
First heat the peanuts in boiled water and remove their skin. Then add a little water and a bit of soda and let the peanuts cook thoroughly until tender. Then remove them out when the soup becomes a milky white, producing a soup that is believed to have medicinal properties. It tastes sweet and refreshing and is suitable for people of all ages.
