The Shangri-la Hotel Fuzhou has recently launched a feast featuring salmon, giving more choices to customers on weekends.
Alain Krumm, French executive chef of the hotel, selected salmon as the major ingredient for cooking many specialties, including chopped smoked salmon, salmon tartar, smoked salmon roll with shrimp mousse, fried salmon with black sesame mustard sauce and fried salmon with almond butter sauce. The dishes alternately appear on the menus either on Friday or Saturday nights.
Besides traditional Western style dishes, the chef also blends Asian flavors into the salmon, such as salmon wonton, pineapple salmon strings and salmon-flavored miso soup.
"We provide all kinds of teas, beverages and imported wines to go with the salmon dishes," said Krumm.
