Chabaixi - the latte art of China

Chabaixi is like latte art but not. It uses fresh water to draw a pattern on the surface of white tea foam, while latte art uses milk to draw on top of coffee.

The process of making the tea foam is a special tea drinking method from the Song Dynasty (960-1279) in China, called "dian cha". They would grind the tea until it formed a powder, pour water into the powder and whisk it until it formed a foam, then they would drink the foam and the tea together.
